CLEAN EATING BANANA PANCAKES

Banana pancakes

For those of you who know me, know that I ONLY eat food that has a ton of flavor. It's embedded into my soul from my mom. This banana pancake recipe isn't new by any means...but how I jazzed it up is and it's all CLEAN. I didn't even know what Clean eating was until a few months into journey, that was 1 year ago and now I hold

Banana Pancake Recipe
Pancake Ingredients:
1 Banana
2 Lg eggs
Chocolate topping:
1 T Organic Coconut Oil
2T Organic Dark Chocolate mini chips made with Stevia

Other Toppings:
Vanilla Greek Yogurt, Organic Coconut, and Organic Raspberries
Pancakes:
Cut up the bananas into 1 inch slices, crack 2  eggs into the bowl and mash them with a hand blended. literally takes 1 min. Depending on banana size sometimes I will add 1 heaping T. of organic coconut flour to thicken it up.


Fry them up on medium heat in 1 T. of Organic coconut oil. flip them when you see bubbles around the edges. Remember they are mock pancakes so the texture is different, it takes them a little longer to cook and they're not as fluffy. Set aside.
 
Chocolate topping:
Take 1 T. of chips and oil and add them to  a coffee cup and heat in the microwave for 30 seconds at a time. remove cup and stir chips. Keep doing this until you notice that its starting to melt, then add more chips and repeat. you need to be careful because chocolate burns quickly, so make sure you stir it a lot. Once its melted add it directly to the corner of a sandwich baggie. Squeeze it all to the corner twist the bag and snip the tip off to drizzle the chocolate mix.
What to Do:
The rest is pretty simple. Add a container of vanilla Greek yogurt on top of the pancakes,top with raspberries and coconut. Then Drizzle the Chocolate mix in a back and forth horizontal pattern. Walla! Now you have a breakfast that looks like it stepped out of a Culinary magazine and it tastes totally delicious. Enjoy!

21 DAY FIX OATMEAL BREAKFAST IDEAS
 

 
 
 
A healthy breakfast is a key part to your success, don't skip it! It will give you energy, improve concentration, lower cholesterol levels, and give you much needed strength and endurance to nail your workouts.
 



Ever since I started using the 21 Day Fix I pretty much ate the same thing but in different variations. Oatmeal, Greek yogurt and fruit was the essential for every breakfast. Its simple to make, easy to store, and seems to last forever in the refrigerator.
 
 


 
I normally cook up a double batch or 6 serving worth for the week. I always like to make extra incase I need another yellow for the day. I'm a total flavor girl, I don't like things bland or plain at all. No Thank you! Normally I add 1 or 2 T of cinnamon and organic vanilla to every batch I make while its cooking. Talk about a kitchen that smell wonderful. Mmmm hmmm.
 



 
Tip: When cooking your oatmeal have your containers separated and ready to fill. Oatmeal has a tendency to set fast so you will want to fill your 21 Day Fix containers A.S.A.P. while its soft.


 
Like I said before, I'm a full flavor girl. I love adding Greek vanilla yogurt to my oatmeal. It's like a creamy rich desert and its completely filling. Ummm angels sing lol


 
Get creative add all types of berries, not only are they full of antioxidants but they are very filling and a perfect way to get your purple containers in. A few of my favorites are strawberries, blueberries, blackberries, and occasionally I will add a banana.


 
Lastly, I add nuts to make sure I get my blue or orange containers filled. Almonds, pecans, walnuts are a few of my normal choices and I keep them all in the freezer so they last longer.

Clean Eating Cinnamon French Toast-(21 DAY FIX)

CLEAN EATING CINNAMON FRENCH TOAST
21 DAY FIX APPROVED




The 21 Day Fix is a nutrition based program that teaches you portion control with clean eating and exercise. It has literally changed the way I think about food and how much I consume. I've lost 12 lbs in 21 Days and would highly recommend it to anyone that struggles with portion control and nutrition, it's a game changer.




INGREDIENTS

  • EZEKIEL 7 SPROUTED GRAINS BREAD
  • 2 ORGANIC EGGS
  • 2 T ALMOND MILK
  • 2 T CINNAMON
  • 1 T PB2
  • 1 T ORGANIC DARK CHOCOLATE CHIPS
  • 1 BANANA
  • 1 T ORGANIC COCONUT OIL
  • ORGANIC COCONUT FLAKES
FRENCH TOAST
Place coconut oil in a skillet, heat on low then prepare the egg mixture. Whisk the eggs, almond milk and cinnamon together and set aside. Place bread in the bowl for 2 minutes flipping it over after a 1 min. Ezekiel bread is super dense and it takes time to absorb. Turn heat to Medium and place soaked bread into the skillet. Fry until lightly golden brown on each side. All ingredients are 21 Day Fix approved.

PB2 AND CHOCOLATE MIX
Mix PB2 as according to direction on the container. In a separate dish or cup, take chocolate chips and melt in the microwave 1 min at a time stirring it. Chocolate can burn easily so be careful. I also added a little coconut oil to make it smoother. Once the chocolate is melted place the PB2 in the microwave for 30 seconds.

TO SERVE
Cut your toast in half to create triangles, top with a sliced banana, drizzle with PB2 and Chocolate mixtures, and sprinkle with coconut if you wish. Yummo! This meal is very filling, I was actually satisfied with only half of it. 21 Day Fix ,yes you can have chocolate! =)
