CLEAN EATING BANANA PANCAKES

Banana pancakes

For those of you who know me, know that I ONLY eat food that has a ton of flavor. It's embedded into my soul from my mom. This banana pancake recipe isn't new by any means...but how I jazzed it up is and it's all CLEAN. I didn't even know what Clean eating was until a few months into journey, that was 1 year ago and now I hold

Banana Pancake Recipe
Pancake Ingredients:
1 Banana
2 Lg eggs
Chocolate topping:
1 T Organic Coconut Oil
2T Organic Dark Chocolate mini chips made with Stevia

Other Toppings:
Vanilla Greek Yogurt, Organic Coconut, and Organic Raspberries
Pancakes:
Cut up the bananas into 1 inch slices, crack 2  eggs into the bowl and mash them with a hand blended. literally takes 1 min. Depending on banana size sometimes I will add 1 heaping T. of organic coconut flour to thicken it up.


Fry them up on medium heat in 1 T. of Organic coconut oil. flip them when you see bubbles around the edges. Remember they are mock pancakes so the texture is different, it takes them a little longer to cook and they're not as fluffy. Set aside.
 
Chocolate topping:
Take 1 T. of chips and oil and add them to  a coffee cup and heat in the microwave for 30 seconds at a time. remove cup and stir chips. Keep doing this until you notice that its starting to melt, then add more chips and repeat. you need to be careful because chocolate burns quickly, so make sure you stir it a lot. Once its melted add it directly to the corner of a sandwich baggie. Squeeze it all to the corner twist the bag and snip the tip off to drizzle the chocolate mix.
What to Do:
The rest is pretty simple. Add a container of vanilla Greek yogurt on top of the pancakes,top with raspberries and coconut. Then Drizzle the Chocolate mix in a back and forth horizontal pattern. Walla! Now you have a breakfast that looks like it stepped out of a Culinary magazine and it tastes totally delicious. Enjoy!
