SUPER EASY CHICKEN CROCK POT MEAL



 SUPER EASY SANTA FE CHICKEN FOOD PREP 
IDEA ONLY 4 INGREDIENTS



SANTA FE CROCK POT CHICKEN
On any given Sunday I have some type of chicken cooking in my crock pot. I feel it's the easiest way to cook 5 lbs of chicken for the week, set it and forget it. The crock pot has saved me many times and it's essential to Food Prep if you want great results with achieving your goals. 

Before I started my journey it was a lot of fast food and not many home cooked meals. I was just too lazy to cook and wanted food fast ans NOW. A few years back one of my cousins suggested Italian crock pot beef. I decided to try chicken with it instead, I'm not much of a beef eater...but I do enjoy a steak every now and then.

4 INGREDIENTS THAT'S ALL



INGREDIENTS
  • 5 LBS FROZEN CHICKEN BREAST
  • 1 CAN NO SALT ADDED DICED TOMATOES
  • 1 BOTTLE LAWRY'S SANTA FE CHILI MARINADE
  • 1 T. FAT LOUIES GARLIC OLIVE OIL

POUR 1/2 CAN OF TOMATOES IN THE BOTTOM OF THE CROCK POT, WITH 1/2 BOTTLE OF THE MARINADE

PLACE THE FROZEN CHICKEN THE POT ANS POUR THE REMAINDER OF THE TOMATOES ANS MARINADE OVER THE CHICKEN. LASTLY DRIZZLE 1 T. OF GARLIC OIL OVER THE TOP.

COOK ON HIGH 4-5 HRS OR LOW 8-10 HRS. ALWAYS CHECK THE INTERNAL TEMPERATURE WITH A FOOD THERMOMETER, THEY RECOMMEND 165F. 

ONCE IT REACHES THAT TEMPERATURE I DRAIN THE JUICE AND PLACE IT IN A SEPARATE BOWL FOR SHREDDING. I USE 2 FORK TO SHRED THE CHICKEN AFTER IS COOLS DOWN A BIT, THEN STORE IT IN THE SAME BOWL. IT WILL LAST A WEEK BUT SOMETIMES I WILL FREEZE HALF OF IT IF I'M HAVING ANOTHER MEAT THAT WEEK ALSO. 

ENJOY THE FLAVOR IS FANTASTIC.

For those of you who know me, know that I ONLY eat food that has a ton of flavor. It's embedded into my soul from my mom. This banana pancake recipe isn't new by any means...but how I jazzed it up is and it's all CLEAN. I didn't even know what Clean eating was until a few months into journey, that was 1 year ago and now I hold

Banana Pancake Recipe
Pancake Ingredients:
1 Banana
2 Lg eggs
Chocolate topping:
1 T Organic Coconut Oil
2T Organic Dark Chocolate mini chips made with Stevia

Other Toppings:
Vanilla Greek Yogurt, Organic Coconut, and Organic Raspberries
Pancakes:
Cut up the bananas into 1 inch slices, crack 2  eggs into the bowl and mash them with a hand blended. literally takes 1 min. Depending on banana size sometimes I will add 1 heaping T. of organic coconut flour to thicken it up.


Fry them up on medium heat in 1 T. of Organic coconut oil. flip them when you see bubbles around the edges. Remember they are mock pancakes so the texture is different, it takes them a little longer to cook and they're not as fluffy. Set aside.
 
Chocolate topping:
Take 1 T. of chips and oil and add them to  a coffee cup and heat in the microwave for 30 seconds at a time. remove cup and stir chips. Keep doing this until you notice that its starting to melt, then add more chips and repeat. you need to be careful because chocolate burns quickly, so make sure you stir it a lot. Once its melted add it directly to the corner of a sandwich baggie. Squeeze it all to the corner twist the bag and snip the tip off to drizzle the chocolate mix.
What to Do:
The rest is pretty simple. Add a container of vanilla Greek yogurt on top of the pancakes,top with raspberries and coconut. Then Drizzle the Chocolate mix in a back and forth horizontal pattern. Walla! Now you have a breakfast that looks like it stepped out of a Culinary magazine and it tastes totally delicious. Enjoy!
